A ceramic bowl full of edible flowers held in two hands

For centuries flowers were something to look at. Now they're something to taste.

Arán and Noé behind the Pipilacha counter, flower courses plated in front

A whole menu made of flowers.

Fifteen courses, and in every one a different flower runs the show. Not as decoration: as the main ingredient, cooked as far as its flavour will go. You won't find this at any other restaurant in Madrid, because almost no one has tried. You sit at the counter, watch it happen a metre away, and leave having tasted things that exist nowhere else.

Who's behind it →

Thirty-two edible flowers, a single season.

The two chefs plating at the counter during service

Front row

Only eight people live each service facing the kitchen. Here the menu starts before the first bite.

A chef talks with a guest across the counter

Every dish has a story

While they cook, the chefs share where each creation came from and the role each flower plays. You don’t just taste the dishes: you understand how they came to be.

The counter set with flowers and cutlery, ready for service

Sixteen seats per service

Eight facing the kitchen, where the chefs share the process and the story behind each dish. Eight in the dining room, with the same menu from another angle.
